The challenge is out to the Team Toba athletes to come up with some new snack recipes to get them through long days of workouts and practice...and of course bring samples for their coaches to try. Last night Renee brought some awesome no-bake energy bites and they were definitely a hit! Here's the recipe (and a photo that shows you what they look like), I also found the recipe online HERE:
Ingredients:
- 1 cup (dry) oatmeal (ie. old-fashioned oats)
- 2/3 cup toasted coconut flakes
- 1/2 cup peanut butter
- 1/2 cup ground flax seed
- 1/2 cup semisweet chocolate chips (or vegan chocolate chips)
- 1/3 cup honey or agave nectar
- 1 tablespoon chia seeds (optional)
- 1 teaspoon vanilla
Directions:
- Stir all ingredients together in a medium bowl until thoroughly mixed. Cover and let chill in the refrigerator for half an hour.
- Once chilled, roll into balls of whatever size you would like. (Mine were about 1" in diameter.) Store in an airtight container and keep refrigerated for up to 1 week. You could also press the mixture into a baking dish lined with parchment paper (or sprayed with non-stick cooking spray) and then cut into squares...but not sure that's as much fun as rolling them into balls?
